- Collating data for daily Food Cost from each site in given format i.e. Wastage, Sales Data, Closing Stock at sites & Consumption of A La Carte Material and presenting it in report format.
- Maintain & prepare of food cost reports on daily & monthly basis.
- Arrange surprise spot checks at the outlets.
- Daily Purchase bill along with GRN & PO including cash purchasing if any to be checked and submitted to the accounts.
- Analyze daily consumption pattern against sales and present in a report format.
- Daily store requisition to be checked and approved by Controller before issue and updating on the software.
- Check the daily Food & Beverage revenues, reconcile the KOTs against sale, void and cancelled.
- Monitoring & controlling raw material transfers to Kitchen and sites.
- Weekly physical stock inventory & reconciliation at the central stores
- Implementations-
- Menu engineering and assisting in menu planning with suggesting the high yield, high moving items
- Update selling prices in POS as per the instruction from authorized persons.
- Updating the standard recipes on Software.
- Check and ensure all menu items have a recipe.
